How fermentation works

Prepare and pack

Cut the vegetables as directed and pack them into an appropriate food-grade vessel.

Keep them submerged

Use a food-safe method to keep the vegetables below the brine line as the recipe directs.

Cover appropriately

What is fermentation, exactly?

At its simplest, fermentation uses microorganisms to transform food.

In vegetable fermentation, microorganisms naturally present on the vegetables consume sugars and produce acids and other compounds. As the process develops, acidity increases, and the vegetables change in flavor, aroma, and texture.

That transformation is how ordinary cabbage becomes sauerkraut, or cucumbers become fermented dill pickles. The vegetables have not simply been soaked in something sour. The food itself has gone through a fermentation process.

Fermentation and quick pickling are not the same thing

A quick pickle generally gets its acidity directly from vinegar. In a fermented pickle or sauerkraut, acidity develops during fermentation. Both methods can make delicious food. They are simply different techniques.

Do you need special fermentation equipment?

Humans fermented vegetables long before anyone sold fermentation kits, so the basic process does not depend on owning a collection of gadgets.

What matters is that your setup performs the jobs the process requires. You need:

  • an appropriate food-grade vessel;
  • a reliable recipe and process;
  • the correct ingredients and proportions for that recipe;
  • a way to keep the vegetables appropriately submerged;
  • an appropriate cover or fermentation system;
  • enough guidance to know what to do as the batch develops.

Purpose-built fermentation equipment can make some of those jobs more convenient and repeatable. A tamper helps pack vegetables. A fermentation weight helps keep them submerged. An airlock-style lid helps manage the fermentation environment.

None of those tools replaces the process. They simply have jobs within it.

What should you expect as a ferment changes?

You may see bubbles. Brine may become cloudy. Ingredients may shift. Sediment can appear. Some changes can be part of normal fermentation activity. Others can signal a problem.

A quick note about fermentation safety

Fermentation is a traditional food-preservation method, but that does not mean every jar of vegetables left on a counter becomes safely preserved food.

Use clean equipment and food-grade materials. Start with sound produce. Follow tested recipes and their salt proportions. Pay attention to the recommended temperature, time, and storage instructions.

Do not assume a homemade ferment is shelf-stable simply because it tastes sour.
