We use 2.25% salt by cabbage weight for sauerkraut. Weigh the prepared cabbage, multiply that number by 0.0225, and add the result in grams.
For 567 grams of cabbage:
567 × 0.0225 = 12.76 grams of salt
Use 12.8 grams on a tenth-gram scale, or 13 grams on a whole-gram scale.
The sauerkraut salt formula
Grams of cabbage × 0.0225 = grams of salt
Use the weight of the cabbage after you've removed the outer leaves, core, and damaged pieces. Weigh it before you add the salt.
Here are a few common batch sizes:
- 400 g cabbage: 9.0 g salt
- 500 g cabbage: 11.3 g salt
- 567 g cabbage: 12.8 g salt
- 750 g cabbage: 16.9 g salt
- 1,000 g cabbage: 22.5 g salt
Round only after you finish the calculation. If your scale reads whole grams, round to the nearest whole gram.
Why we use 2.25%
We use 2.25% because it sits inside the well-established range for traditional sauerkraut and gives us a clear, repeatable house standard.
The salt does several jobs at once.
First, it draws water and nutrients from the cabbage. As you mix and press the salted shreds, the cabbage releases the liquid that becomes its brine. You aren't calculating salt against a separate pot of water because this is a dry-salted ferment.
Second, salt changes which microorganisms have an advantage. It helps restrain many competitors while the lactic acid bacteria associated with sauerkraut take over in their usual sequence.
Third, it helps protect texture and flavor. Research on reduced-salt sauerkraut found that naturally fermented batches became more variable as salt dropped, with more softening and off-flavor problems.
Salt doesn't work alone. Fresh produce, even mixing, submersion, temperature, time, and storage still matter. A percentage can't rescue a batch when the rest of the method is wrong.
Is 2.25% the only correct ratio?
No. It's our standard for this sauerkraut method, not a universal number for every ferment and not a magic safety cutoff.
Traditional references commonly place sauerkraut around 2.0% to 2.25% salt by cabbage weight. Clemson Extension describes 2.25% to 2.5% as favorable. We choose 2.25% because it's established, easy to repeat, and sits where those references overlap.
That doesn't mean every vegetable should use 2.25%. A dry-salted cabbage ferment and a jar filled with a separately mixed brine use different calculations. Follow the denominator and controls in the specific recipe you're making.
Why grams are better than teaspoons
Salt crystals don't all pack into a teaspoon the same way. Fine crystals can fit more weight into the spoon than coarse crystals, and brands can differ.
Morton lists 1/4 teaspoon of its canning and pickling salt as 1.5 grams. At that density, 2 1/4 teaspoons comes to about 13.5 grams, not 12.8 grams. Another salt may measure differently again.
That's why our formula leads with grams. A scale measures the amount you actually need. A teaspoon is only an approximation unless the recipe names the salt and its tested volume conversion.
For 567 grams of cabbage, weigh 12.8 grams of salt. If your scale only reads whole grams, use 13 grams.
Calculate your batch in four steps
- Remove the outer leaves, core, and any damaged cabbage.
- Weigh the prepared cabbage in grams.
- Multiply that weight by 0.0225.
- Weigh that many grams of pickling or canning salt.
Then mix the salt through the cabbage evenly. You'll feel the shreds soften and see liquid collect as the salt begins drawing moisture from the cabbage.
Five mistakes to avoid
Using the jar size as the denominator
The jar tells you how much space you have. It doesn't tell you how much salt to use. Weigh the prepared cabbage.
Calculating against added water
This formula belongs to dry-salted sauerkraut. The cabbage releases its own liquid. A separately mixed brine is a different formula.
Treating a teaspoon as exact
Spoon measurements change with crystal size and brand. Use a scale when the percentage matters.
Rounding before you multiply
Keep the full cabbage weight through the calculation, then round the salt at the end.
Changing the salt without changing the method
Less salt doesn't simply make the same sauerkraut less salty. It changes the fermentation environment and can make the result less predictable. If you want to test a lower-salt process, use a method designed and validated for that purpose.
