Four Easy Ways to Eat Fresh Sprouts
A jar of sprouts can make an ordinary meal feel finished. Start with a handful and add it at the end, right before you eat.
1. Avocado toast
Spread avocado on warm toast, add a pinch of salt, and finish with broccoli or alfalfa sprouts. The sprouts bring the crunch that makes a simple breakfast feel more complete.
2. Eggs
Fold sprouts into scrambled eggs just before serving, or pile them on top of fried eggs. Radish sprouts bring a peppery bite. Broccoli and clover stay mild.
3. Tacos and wraps
Use sprouts where you would usually reach for shredded lettuce. A handful of radish sprouts gives tacos a crisp, peppery finish. Milder sprouts work well in wraps and sandwiches.
4. Grain bowls and salads
Add sprouts after the bowl is dressed and built. They bring freshness to roasted vegetables, rice, beans, grains, and anything that needs a little crunch at the end.
Keep them at their best
Rinse sprouts at harvest, drain them thoroughly, and refrigerate them once they are dry. Use them within three to five days. Add them at the end of cooking, rather than letting them sit in a hot pan.
